Ingredients

Scale

Fruits

  • 1 large pomegranate (or 1¾ cups/290 g ready-to-eat pomegranate arils), with juices
  • 2 large navel oranges
  • 2 pink grapefruits

Additional

  • 1 tablespoon sugar (optional, if needed)

Instructions

  1. Prepare the pomegranate: Place the pomegranate on a non-staining surface and cut a cross into its crown halfway down. Hold the pomegranate crown side down over a large bowl placed in the sink, break it into quarters, and squeeze each firmly to release the seeds and juice into the bowl. Bend each quarter back to release more seeds and juice. Remove any white membrane bits, keeping only the seeds and juice.
  2. Segment the oranges and grapefruits: Cut a slice from the top and bottom of each orange and grapefruit so they rest flat on the cutting board. Using a sharp knife, remove all skin and pith by cutting around each fruit. Holding the fruit over the bowl, carefully cut out the segments by slicing between the membranes to the middle of the fruit. Squeeze the remaining membranes over the bowl to release any remaining juice.
  3. Sweeten and chill: Taste the mixed fruit and juice, then add up to 1 tablespoon sugar if needed and gently stir to combine. Cover the bowl with plastic wrap and refrigerate the salad until ready to serve.
  4. Serve: Spoon the fruit salad into bowls, making sure to include plenty of the delicious juice to enjoy with the fruit.

Notes

  • Using ready-to-eat pomegranate arils can save prep time if available.
  • Be careful when cutting the citrus fruit to avoid wasting the juicy segments.
  • Adjust sweetness to your preference; the natural sweetness of the fruits may be sufficient without added sugar.
  • Serve chilled to enhance the refreshing flavors.
  • This salad is best eaten the same day for optimal freshness.
