- Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook until fragrant, about 1 minute. Add the sliced grape tomatoes and oregano, sautéing until tomatoes begin to soften and release juices, about 3-4 minutes.
- Deglaze with White Wine: Pour in the 1/2 cup white wine to deglaze the skillet, scraping any browned bits from the bottom. Let the wine simmer and reduce slightly for about 2-3 minutes.
- Combine Ingredients: Return the cooked chicken to the skillet and stir to combine with the tomatoes and garlic. Add the cooked pasta and drizzle with about 2 tablespoons more olive oil. Toss everything together well, heating through and adjusting sauce thickness with pasta water if necessary.
- Finish with Feta Cheese: Remove skillet from heat and sprinkle crumbled feta cheese over the pasta. Gently toss to incorporate the cheese without fully melting it, allowing a creamy texture with distinct feta pockets.
