Strudel Filling
- 2 cups frozen or fresh strawberries
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 cup granulated sugar
Pastry
- 2 sheets puff pastry, thawed (9x8 inch sheets)
Glaze
- 2 tablespoons butter, melted
- 1 cup powdered sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon vanilla extract
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a cookie sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
- Prepare Puff Pastry: Thaw the puff pastry sheets according to package instructions. Cut each sheet into 6 squares, making a total of 12 rectangles for your strudels.
- Cook Strawberry Filling: In a medium saucepan, combine the strawberries, lemon juice, and granulated sugar. Cook over medium heat for 3-4 minutes, stirring occasionally, until the berries begin to break down and release their juices.
- Thicken Filling: Stir in the cornstarch to thicken the mixture. Continue cooking for another minute until the filling is glossy and thickened. Remove from heat and allow it to cool slightly to prevent the puff pastry from becoming soggy.
- Assemble Strudels: Spoon a portion of the cooled strawberry mixture onto the center of 6 of the puff pastry rectangles, leaving space around the edges for sealing.
- Seal Edges: Place the remaining 6 puff pastry rectangles on top of the filled ones. Use a fork to crimp and seal all the edges securely to prevent the filling from leaking during baking.
- Bake: Arrange the assembled strudels on the prepared baking sheet. Bake in the preheated oven for 20-22 minutes or until the puff pastry is puffed up and golden brown.
- Prepare Glaze: While the strudels are baking, whisk together melted butter, powdered sugar, heavy cream, and vanilla extract in a small bowl until smooth and well combined.
- Glaze and Serve: Remove the baked strudels from the oven and let them cool slightly. Drizzle the vanilla glaze over the top and serve warm or at room temperature. Enjoy your homemade toaster strudels!
Notes
- You can use fresh or frozen strawberries; fresh will give a brighter flavor.
- Make sure the puff pastry is fully thawed before cutting to prevent cracking.
- Allow the filling to cool before filling the pastry to avoid sogginess.
- For a different flavor, try swapping strawberries with blueberries or raspberries.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
