Ingredients

Scale

For the Donut Batter:

  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 1/3 cups milk
  • 1/3 cup sugar
  • 2 cups flour
  • 1/2 cup unsalted butter (melted and cooled to room temperature)
  • 1 tsp baking powder
  • 1 pinch salt

For the Churro Topping:

  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter (melted and kept warm)
  • 2 tbsp ground cinnamon

For the Chocolate Drizzle:

  • 1/2 cup chopped dark chocolate
  • 2 tbsp heavy cream

Instructions

  1. Prepare the Dry and Wet Ingredients: In a large bowl, combine the flour, sugar, cinnamon, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, vanilla, and melted cooled butter until well combined.
  2. Create the Batter: Gradually incorporate the dry ingredients into the wet ingredients bowl. Stir until the mixture is evenly combined and smooth, with no lumps, resulting in a pourable batter.
  3. Bake the Donuts: Spoon or pipe the batter into a DIY doughnut tin. Place the tin in a preheated oven at 350°F (175°C) and bake for 20-25 minutes until the donuts are a light golden color. Remove the donuts from the oven and let them cool in the tin for about 5 minutes, then turn out onto a wire rack and carefully remove the tin foil.
  4. Prepare the Topping: While the donuts cool, melt 1/4 cup of butter in a small bowl. In another small bowl, mix together the sugar and cinnamon and set aside.
  5. Make the Chocolate Ganache: Melt the chopped dark chocolate either in the microwave or over a bain-marie. Once melted, stir in the heavy cream until smooth, shiny, and thick.
  6. Assemble the Donuts: Brush each cooled donut with the melted butter, then roll it in the cinnamon sugar mixture to coat all sides. Dip the top half of each donut into the chocolate ganache, generously coating with chocolate. Serve and enjoy your sweet churro donut bites!

Notes

  • If you don’t have a donut tin, you can use a muffin tin and shape the batter accordingly.
  • For an extra crispy coating, roll the donuts immediately after brushing with butter while it’s still warm.
  • Use dark chocolate for the ganache to balance the sweetness and enhance the flavor.
  • Store leftover donut bites in an airtight container at room temperature for up to 2 days.
  • Reheat briefly before serving to restore some softness and chocolate sheen.
