Cookie Dough

  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 & 1/2 cup All-purpose flour
  • 1/2 cup Graham crackers (finely crushed, about 3.5 sheets)
  • 1/4 tsp Salt
  • 3/4 tsp Baking soda

Filling

  • 5 standard Hershey bars
  • 1 & 1/2 cup Marshmallow fluff

Instructions

  1. Prepare the Dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, beating well to combine. In a separate bowl, whisk together the all-purpose flour, finely crushed graham crackers, salt, and baking soda. Gradually add the dry ingredients to the wet mixture, mixing until fully incorporated to form the cookie dough.
  2. Assemble the Bars: Preheat your oven to 350°F (175°C). Line a baking pan (approximately 8×8 inches) with parchment paper to prevent sticking. Press half of the cookie dough evenly into the bottom of the pan to form a base layer. Lay the Hershey bars evenly over this cookie base, making sure to cover the surface.
  3. Add the Marshmallow Layer: Spread the marshmallow fluff evenly over the chocolate layer, being careful to cover all areas so the marshmallows will melt nicely and stick to the layers.
  4. Top with Remaining Dough: Crumble or dollop the remaining half of the cookie dough over the marshmallow layer. Don’t worry if it’s not perfectly even, as it will spread slightly while baking.
  5. Bake the Bars: Place the baking pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the marshmallow layer is bubbly. Keep an eye on the edges to avoid burning.
