Main Ingredients
- 1 small head green cabbage (or savoy cabbage)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons unsalted butter (or additional olive oil)
- 1 tablespoon honey
- 3 cloves garlic (minced)
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 3 tablespoons freshly grated Parmesan cheese (optional)
- Chopped fresh parsley or chives (optional)
- Prepare: Place a rack in the center of your oven and preheat to 425°F. Cut the cabbage into eight wedges by first halving it lengthwise through the stem, then slicing each half lengthwise again, and finally halving each quarter. Line a large rimmed baking sheet with parchment paper for easy cleanup and arrange the cabbage wedges in a single layer.
- Oil the cabbage: Brush the cabbage wedges with extra-virgin olive oil on one side, then flip them over and brush the other side as well to ensure even coating.
- Make seasoning mixture: In a small bowl, melt the unsalted butter and whisk in the honey, minced garlic, kosher salt, and ground black pepper to combine the flavors.
- Season the cabbage: Brush the honey-garlic butter mixture liberally over the top of the cabbage wedges, coating thoroughly for maximum flavor.
- Roast the cabbage: Place the baking sheet in the preheated oven and roast the cabbage for 15 minutes. After 15 minutes, flip each wedge over using a spatula.
- Add Parmesan and continue roasting: Sprinkle the freshly grated Parmesan cheese on top of the flipped cabbage wedges, then continue roasting for an additional 15 to 20 minutes until the cabbage is tender and the edges are beautifully dark brown and caramelized.
- Garnish and serve: Remove the cabbage from the oven, sprinkle with chopped fresh parsley or chives if desired, and let the wedges cool for a few minutes before serving.
Notes
- Use parchment paper to avoid sticking and make cleanup easier.
- Adjust honey amount for sweeter or less sweet flavor based on preference.
- If avoiding dairy, substitute butter with an equal amount of olive oil and omit Parmesan cheese.
- The dark caramelized edges add depth and crunchiness and are highly flavorful.
- Can be served as a side dish with roasted meats, grilled proteins, or as a vegetarian main component.
