Ingredients

Scale

Meat

  • 12 oz Kielbasa, cut into 1/2-inch thick slices

Vegetables

  • 1 lb (about 3 cups) potatoes, diced
  • 3 cups broccoli florets
  • 2 small bell peppers, diced

Seasoning & Oil

  • 2 tsp oregano
  • 4 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the vegetables and kielbasa to develop a nice caramelization.
  2. Prepare ingredients: Cut the kielbasa into 1/2-inch thick slices. Dice the potatoes into bite-sized pieces, cut the broccoli into florets, and dice the bell peppers.
  3. Toss with seasoning and oil: In a large bowl, combine the potatoes, broccoli, bell peppers, and kielbasa slices. Add 4 tablespoons of olive oil, 2 teaspoons of oregano, salt, and pepper to taste. Toss everything well to ensure even coating.
  4. Arrange on sheet pan: Spread the mixture evenly on a large rimmed baking sheet. Make sure the ingredients are in a single layer for optimal roasting.
  5. Roast in oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden brown, the vegetables are cooked through, and the kielbasa slices are nicely browned.
  6. Serve: Remove from oven and serve warm. This dish pairs well with a simple side salad or crusty bread if desired.

Notes

  • You can substitute the kielbasa with other smoked sausages or bratwurst if preferred.
  • Feel free to add other vegetables like onions or carrots depending on your preference.
  • If you want extra crispy potatoes, soak diced potatoes in cold water for 30 minutes, then drain and dry before roasting.
  • Adjust salt and pepper according to taste.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
