Instructions

  1. Preheat the oven: Set your oven to 200°C (180°C fan) or gas mark 4, and line two baking trays with baking parchment to prevent sticking.
  2. Prepare the dough: In a large mixing bowl, combine the mashed bananas, porridge oats, ground almonds, cinnamon, and a pinch of salt. Stir together until you form a sticky dough.
  3. Add the raspberries: Gently fold in the raspberries, being careful not to break them to keep whole berry bursts in the cookies.
  4. Form the cookies: Using tablespoons, scoop out the mixture and roll into balls. Place the balls evenly spaced on the prepared baking trays, then flatten each ball slightly with the palm of your hand to form cookie shapes.
  5. Bake the cookies: Place the trays in the oven and bake for about 15 minutes, or until the cookies are firm around the edges and have turned a golden brown color.
