These colorful Rainbow Fruit Lollies are a refreshing and healthy frozen treat made by layering pureed fruit and yogurt. Perfect for summertime, they combine the natural sweetness of mango, banana, kiwi, raspberries, and blackberries in creamy yogurt layers to create a delicious and visually appealing snack that kids and adults will love.

Mango Layer

  • 100g mango, peeled, stoned and chopped
  • ½ banana
  • 100g yogurt

Kiwi Layer

  • ½ banana
  • 100g yogurt
  • 2 kiwi fruit, peeled and roughly chopped

Raspberry Layer

  • 100g frozen raspberries
  • 100g yogurt

Blackberry Layer

  • 100g frozen blackberries
  • 100g yogurt

Instructions

  1. Prepare the Mango Layer: Blitz the mango with half a banana and 100g of yogurt in a blender until the mixture is smooth. Divide this mixture between six ice lolly moulds, then insert a stick into each. Secure the sticks by holding them upright and taping on both sides of the mould. Freeze this layer for 1 hour until set.
  2. Prepare the Kiwi Layer: Blend the remaining half banana, 100g yogurt, and peeled, chopped kiwi fruit until smooth. Pour this mixture carefully over the frozen mango layer in the moulds. Freeze again for 1 hour until this layer is set.
  3. Prepare the Raspberry Layer: Blend 100g frozen raspberries with 100g yogurt until smooth. Pour this mixture over the set kiwi layer, then freeze for another hour until firm.
  4. Prepare the Blackberry Layer: Blend 100g frozen blackberries with 100g yogurt until smooth. Pour this final layer on top of the set raspberry layer. Cover the moulds and freeze overnight to fully set the lollies.
  5. To Serve: To remove the lollies from the moulds, briefly run warm water over the outside of the moulds to loosen them. Carefully pull the lollies out and enjoy immediately. These can be stored in the freezer for up to two months.
