Tips & Variations

  • Use Greek yogurt for a thicker, creamier texture.
  • Try adding a touch of honey or maple syrup for extra sweetness if desired.
  • Swap fruits based on seasonal availability or your favorites to customize flavors.
  • If you don’t have ice lolly moulds, small paper cups and wooden sticks work well as substitutes.

Storage

Store the rainbow fruit lollies in the freezer, covered, for up to two months. To serve, briefly run the mould under warm water to loosen each lolly before removing. Avoid refreezing once thawed for best texture and taste.

FAQs

Can I use fresh berries instead of frozen?

Frozen berries help create a smooth, thick texture and keep the layers from mixing. Using fresh berries may result in thinner layers and longer freezing times.

Do I need to add sugar or sweetener?

The natural sweetness of the fruits and yogurt is usually enough, but you can add a little honey or maple syrup if you prefer a sweeter lolly.
