Peach Filling
- 8 fresh peaches (about 2 pounds), peeled, cored, and sliced
- 2 tablespoons granulated sugar
Cobbler Batter
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- Pinch of salt
- ½ cup butter, melted
- 1 teaspoon pure vanilla extract
- Preheat and prepare: Preheat your oven to 350˚F. Lightly grease a 2-quart baking dish with butter and set aside to ensure the cobbler doesn’t stick.
- Arrange peaches: Place the sliced peaches evenly in the bottom of the baking dish. Sprinkle them with 2 tablespoons of sugar to sweeten. If your peaches are especially juicy or soft, toss them gently with a tablespoon of cornstarch to thicken the filling as it bakes.
- Mix dry ingredients: In a mixing bowl, sift together the flour, ¾ cup sugar, baking powder, cinnamon, nutmeg, and salt until well combined to create a flavorful batter base.
- Prepare batter: Melt the butter and whisk in the vanilla extract. Pour this liquid mixture into the dry ingredients and stir until the batter is evenly moistened. The consistency will be like a soft cookie dough.
