This classic Peach Cobbler recipe features juicy fresh peaches baked under a soft, cinnamon-spiced batter topping. It’s an easy, comforting dessert perfect for summer or anytime you crave a warm, fruity treat served with ice cream.

Ingredients

Scale

Peach Filling

  • 8 fresh peaches (about 2 pounds), peeled, cored, and sliced
  • 2 tablespoons granulated sugar

Cobbler Batter

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • Pinch of salt
  • ½ cup butter, melted
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat and prepare: Preheat your oven to 350˚F. Lightly grease a 2-quart baking dish with butter and set aside to ensure the cobbler doesn’t stick.
  2. Arrange peaches: Place the sliced peaches evenly in the bottom of the baking dish. Sprinkle them with 2 tablespoons of sugar to sweeten. If your peaches are especially juicy or soft, toss them gently with a tablespoon of cornstarch to thicken the filling as it bakes.
  3. Mix dry ingredients: In a mixing bowl, sift together the flour, ¾ cup sugar, baking powder, cinnamon, nutmeg, and salt until well combined to create a flavorful batter base.
  4. Prepare batter: Melt the butter and whisk in the vanilla extract. Pour this liquid mixture into the dry ingredients and stir until the batter is evenly moistened. The consistency will be like a soft cookie dough.
  5. Top peaches with batter: Using your hands, crumble or sprinkle the batter over the peaches in the baking dish, covering them evenly but leaving some gaps for bubbling juices.
  6. Bake: Place the dish in the oven and bake for 25 to 30 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  7. Rest: Remove the cobbler from the oven and allow it to rest at room temperature for about 15 minutes, which helps the filling set slightly.
  8. Serve: Serve warm, ideally with a scoop of vanilla ice cream or whipped cream for added indulgence.

Notes

  • For thicker peach filling, toss peaches with 1 tablespoon cornstarch before baking.
  • Peeling peaches is easier if you blanch them in boiling water for 30 seconds and then place them in ice water.
  • You can substitute frozen peaches (thawed) if fresh are unavailable.
  • Store leftover cobbler in an airtight container in the refrigerator for up to 3 days.
  • Warm leftovers gently in the oven before serving for best texture.
