Cheese Blend
- 200g brie, roughly chopped
- 100g soft cheese
- 100g gruyère, rind removed, chopped into small chunks
- 2 tbsp grated parmesan
Other Ingredients
- 2 tbsp milk
- 2 tsp cornflour
- A few thyme sprigs, leaves picked, plus extra for sprinkling
- Pinch of chilli flakes, plus extra for sprinkling
- 100g sweet chilli jam
- Crusty bread, to serve
- Prepare Cheese Mixture: Place the brie, soft cheese, gruyère, half of the parmesan, milk, and cornflour into a food processor. Blitz until the mixture is smooth and creamy. Then, gently stir in the thyme leaves and chilli flakes to evenly distribute the flavors.
- Assemble in Baking Dish: Spread the sweet chilli jam evenly over the base of a baking dish (approximately 15 x 12 cm). Carefully spoon the cheese mixture over the jam layer and smooth the surface. Sprinkle the remaining parmesan on top, followed by extra thyme leaves and a pinch more of chilli flakes to garnish.
- Chill: Cover the prepared baking dish and refrigerate if not baking immediately. It can be kept chilled and covered for up to three days to allow flavors to meld.
- Bake the Fondue: Preheat the oven to 180°C (160°C fan)/Gas mark 3. Place the baking dish on a baking tray and bake for about 20 minutes until the cheese mixture is bubbling and heated through.
- Grill to Finish: Switch the oven to grill mode on medium-high heat. Grill the fondue for 2-3 minutes until the top is golden brown and crisp. Keep a close eye to prevent burning.
- Rest and Serve: Remove from oven and let rest for 5 minutes to thicken slightly before serving. Offer crusty bread on the side for dipping into this rich and spicy cheese delight.

- Make sure to remove the rind from the gruyère for smooth blending and a better texture.
- The cornflour helps to thicken the cheese mixture and prevent it from separating when baked.
