Fritters
- 1 x 400g can chickpeas, drained and rinsed
- 1 x 210g can chickpeas, drained and rinsed
- 1 large egg
- 250g pack lean lamb mince
- 1 tsp ground cumin
- 1 tsp ground coriander
- ¼ tsp ground cinnamon
- 3 garlic cloves, crushed (divided)
- 1 red chilli, deseeded and finely chopped
- ¼ small pack coriander, roughly chopped
- 1 tbsp olive oil
Wrap & Toppings
- 4 large tortilla wraps
- 1 romaine lettuce, shredded
- 4 tomatoes, sliced
- 1 small red onion, thinly sliced
- 150g pot 0% fat Greek yogurt
- Oven chips, to serve (optional)
- Prepare Chickpea Mixture: In a food processor, blend the drained chickpeas with the egg for a few minutes until you achieve an almost purée consistency, but with some texture remaining to give bite to the fritters.
- Mix Fritter Ingredients: Transfer the chickpea mixture to a bowl. Stir in the lean lamb mince, ground cumin, ground coriander, ground cinnamon, two-thirds of the crushed garlic, chopped red chilli, and roughly chopped coriander. Season the mixture well with salt and pepper and mix thoroughly to combine all ingredients.
- Form Fritters: Shape the mixture into 12 small, evenly sized fritters to ensure they cook through evenly.
- Cook Fritters: Heat the olive oil in a non-stick frying pan over medium heat. Cook the fritters in batches for approximately 4 minutes on each side, or until they develop a crisp golden exterior and are fully cooked inside.
- Prepare Wraps: Lay out each tortilla wrap and top with a generous handful of shredded romaine lettuce, sliced tomatoes, and thinly sliced red onion.
- Mix Yogurt Sauce: Stir the remaining crushed garlic into the 0% fat Greek yogurt to infuse flavor and set aside.
- Assemble Wraps: Place 3 cooked fritters onto each prepared wrap. Spoon a little of the garlic yogurt over the fritters. Wrap up the tortillas securely and serve immediately.
- Optional Serving: Serve with oven chips on the side if desired to complete the meal.
Notes
- Make sure to not over-process the chickpeas to retain a bit of texture in the fritters.
- Use lean lamb mince to reduce fat content and keep the fritters light.
- Adjust the amount of chilli to suit your preferred spice level.
- The garlic yogurt can be made ahead and refrigerated to allow flavors to meld.
- Oven chips are optional but add a nice crunchy side to complement the wraps.
