  • 1 chicken carcass or turkey carcass (broken to fit Instant Pot)
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 ribs celery, chopped
  • 2 bay leaves
  • 2 teaspoons black peppercorns
  • 3 sprigs fresh herbs (parsley, rosemary, thyme, and/or sage)
  • Water to fill Instant Pot to the fill line

Instructions

  1. Prepare the carcass: Break the chicken or turkey carcass into pieces that fit comfortably inside your Instant Pot.
  2. Add ingredients to pot: Place the carcass, quartered onion, chopped carrots and celery, bay leaves, black peppercorns, and fresh herbs inside the Instant Pot. Fill the pot with water up to the maximum fill line.
  3. Set pressure cooking: Seal the Instant Pot lid and select the high-pressure cooking setting. Set the timer for 90 minutes to extract maximum flavor and nutrients.
  4. Natural pressure release: After cooking finishes, let the Instant Pot naturally release its pressure for about 30 minutes to ensure the broth settles and flavors meld fully.
  5. Strain and cool broth: Carefully strain the broth through a cheesecloth-lined colander to remove solids. Allow the broth to cool, then skim off any fat from the surface if desired. Your homemade chicken broth is now ready to use or store.
