- Position the mango: Place the mango on a cutting surface with one of the pointed ends facing you. The two broader sides, called the cheeks, will be at either side, ready to be sliced off.
- Slice off the cheeks: Using a serrated knife for more control, slice downwards close to the stone, removing one cheek of the mango. Turn the mango around and repeat to remove the other cheek.
- Score the mango flesh: Take one mango cheek and carefully score the flesh in a diagonal criss-cross pattern, first scoring along the length and then turning 90 degrees to create cubes.
- Invert the mango cheek: Push the skin side of the mango cheek upwards with your fingers so the scored chunks pop out, resembling a hedgehog with flesh sticking out.
- Cut the chunks away from the skin: Carefully slice along the edges to separate the mango cubes from the skin and collect them on your plate or bowl.
- Cut remaining flesh: For the mango flesh around the stone, slice it away following the curve of the stone. Score and remove these pieces as before to maximize mango yield.

- Using a serrated knife provides better control and makes slicing easier but a sharp smooth knife works as well.
