Instructions

  1. Sauté Aromatics: In a pot set over medium-high heat, add 1 teaspoon of olive oil, minced ginger, minced garlic, diced onion, and cilantro stems (if using). Sauté for 3-4 minutes until the onions turn translucent and the flavors meld together.
  2. Add Broth and Boil: Pour in 8 cups of chicken stock and 1 cup of water. Increase the heat and bring the mixture to a rolling boil.
  3. Add Vegetables and Proteins: Once boiling, add sliced mushrooms, quartered baby bok choy, 2 tablespoons soy sauce, 1 teaspoon sesame oil, peeled shrimp, frozen wontons, and half of the sliced green onions. Stir gently to combine.
  4. Cook Soup: Allow the soup to return to a boil and cook for 5-6 minutes, stirring occasionally to ensure even cooking and prevent sticking. This cooks the shrimp, wontons, and vegetables through.
  5. Thicken Soup: Mix 1 teaspoon cornstarch with 1 teaspoon cold water to create a slurry. Add this slurry to the boiling soup during the final 1-2 minutes of cooking. Stir well until the broth slightly thickens and takes on a glossy appearance.
