Ingredients

Scale

Peri-naise Sauce Ingredients

  • 3 tbsp Peri Peri Sauce
  • 3/4 cup mayonnaise (preferably whole egg mayonnaise)
  • 1 tsp smoked paprika (substitute: regular paprika)
  • 1/2 tsp garlic powder (substitute: fresh garlic, finely grated)
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust or remove for less spice)
  • 1/2 tsp white sugar
  • 1 tbsp lemon juice (or apple cider vinegar)
  • 1/4 tsp cooking salt or kosher salt

Instructions

  1. Mix the Ingredients: In a bowl, combine the peri peri sauce, mayonnaise, smoked paprika, garlic powder, onion powder, cayenne pepper, white sugar, lemon juice, and salt. Stir thoroughly until all ingredients are well incorporated into a smooth, creamy sauce.
  2. Refrigerate: Cover the bowl and refrigerate the peri-naise for at least 30 minutes before using. This resting time allows the flavors to meld and develop a more harmonious taste.
  3. Use: Use the peri-naise as a flavorful spread for burgers and wraps, a dipping sauce for fries, crunchy chicken tenders, or popcorn chicken, or drizzle it over salad and rice bowls, poke bowls, and other dishes to add a spicy creamy touch.
  4. Store Properly: Store the peri naise in an airtight container in the refrigerator. When made with peri peri sauce, it will keep for up to 5 days. If you use the dry spices version without peri peri sauce, it will keep for at least one week. Avoid freezing as it may affect the texture and flavor.

Notes

  • Use whole egg mayonnaise for a richer and creamier texture.
  • Adjust cayenne pepper to control the spiciness according to your preference.
  • Lemon juice or apple cider vinegar can be used interchangeably for acidity.
  • Refrigerating the sauce helps enhance the flavor blend.
  • This sauce is not suitable for freezing as it may separate.
  • Can be made without peri peri sauce by increasing dry spices for a milder alternative.
