Instructions

  1. Prepare the Crust: In a medium bowl, combine 1 cup of Oreo crumbs with 2 1/2 tablespoons of melted butter. Mix until the crumbs are evenly coated and the mixture holds together when pressed.
  2. Form the Base: Press the Oreo crust mixture firmly into the bottoms of a greased or lined mini muffin tin to create the base for each cheesecake.
  3. Make the Cheesecake Filling: In a large bowl, beat together the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Add neon green food coloring gradually until you achieve the bright green Grinch color.
  4. Fill the Muffin Tin: Spoon the green cheesecake batter evenly over the Oreo crusts in the mini muffin tin, filling each about 3/4 full.
  5. Bake: Preheat your oven to 325°F (163°C). Bake the mini cheesecakes for about 18-20 minutes, or until the center is just set but still slightly jiggly.
