Bean Layer

  • 2 (16-oz.) cans store-bought or homemade refried beans
  • 1/2 tsp. store-bought or homemade adobo seasoning

Sour Cream Mixture

  • 2 1/4 cups sour cream, divided
  • 1/2 tsp. kosher salt
  • Freshly ground black pepper, to taste

Vegetable & Cheese Layers

  • 1 3/4 cups store-bought or homemade pico de gallo
  • 1 3/4 cups store-bought or homemade queso
  • 4 scallions, thinly sliced (about 1/2 cup)
  • 1 1/2 cups store-bought or homemade guacamole
  • 1/2 lime

Decorations

  • 7 pitted black olives
  • 7 pitted green olives
  • 14 baby carrots
  • Tortilla chips, veggies, or pita chips, for serving

Instructions

  1. Prepare Tortilla Field Goals: Preheat the oven to 400°F and line a baking sheet with parchment paper. Brush each tortilla lightly with canola oil and sprinkle with kosher salt. Using a sharp knife, carefully cut a 2-dimensional field goal shape into each tortilla, then place them on the baking sheet.
  2. Bake Tortillas: Bake the tortillas for 6 to 7 minutes until they turn golden brown and crisp. Remove from oven and transfer to paper towels to cool.
  3. Mix Bean Layer: In a medium bowl, combine the refried beans and adobo seasoning thoroughly. Spread this bean mixture evenly over the bottom of a 13″x9″ baking dish.
  4. Prepare and Spread Sour Cream: Using the same bowl, mix together 2 cups of sour cream with 1/2 teaspoon kosher salt and a pinch of freshly ground black pepper. Spread this sour cream mixture evenly over the refried beans layer in the baking dish.
  5. Layer Pico de Gallo: Strain any excess liquid from the pico de gallo using a fine-mesh strainer. Starting at the shorter left edge of the baking dish, layer the pico de gallo over the sour cream, leaving a 2-inch space of sour cream exposed on the right edge to create part of the field design.
  6. Layer Queso and Scallions: From the shorter right edge of the dish, spread the queso over the sour cream and pico de gallo layers, leaving 2 inches of pico de gallo exposed on the left edge to form one end zone. Sprinkle the scallions over the queso, leaving 2 inches of queso exposed on the other end to create the second end zone.
  7. Spread Guacamole and Add Lime: Spread the guacamole over the scallions to represent the football field’s surface. Squeeze the juice of 1/2 a lime evenly over the guacamole for added flavor and freshness.
  8. Pipe Field Lines and Numbers: Place the remaining 1/4 cup sour cream into a piping bag fitted with a small tip. Pipe a single line down the center of the guacamole parallel to the short edges of the dish to represent the midfield line. Add two evenly spaced lines on each side of the center line to create five goal lines in total. At the base of the center line, pipe the number “5” to the left and “0” to the right to mimic the field’s yard markers.
  9. Assemble Field Goals: Place the baked tortilla field goal posts at each end of the dip to resemble goalposts on the field.
  10. Create Carrot Players: Place one olive onto each baby carrot, using the olive as a football helmet. Insert the carrot players upright into the dip with the olive end sticking up to add a playful, decorative touch.
  11. Serve: Serve the Football Field Dip with tortilla chips, vegetable sticks, or pita chips alongside for dipping and enjoying this festive appetizer.
