Fruit Filling
- 5 peaches, cut into wedges
- 125 g fresh raspberries
- 75 g caster sugar
- Zest of 1 lemon
Cobbler Topping
- 90 g cold butter (salted or unsalted)
- 90 g caster sugar
- 140 g plain flour
- 1 teaspoon baking powder
- 2 teaspoons milk
- 2 tablespoons flaked almonds
- Preheat the oven. Set your oven to 180°C (350°F) to warm up while you prepare the filling and topping.
- Prepare the fruit filling. In a large mixing bowl, combine the peach wedges, fresh raspberries, 75 g caster sugar, and lemon zest. Toss gently to mix and set aside to allow the fruit to release its juices.
- Make the cobbler topping. In another bowl, rub the cold butter into the plain flour, baking powder, and 90 g caster sugar until the mixture resembles coarse crumbs. Add 2 teaspoons of milk to bind the dough together gently.
- Assemble the cobbler. Transfer the fruit mixture into a greased baking dish. Spoon the cobbler topping evenly over the fruit, covering it well but not pressing down. Sprinkle the flaked almonds over the topping for crunch and flavor.
