- Prepare Pandan Mixture: Take 55 g of the warm milk from the first step and mix it with pandan powder in a small bowl until completely smooth. Pour this pandan mixture back into the saucepan and stir to blend everything harmoniously.
- Soften Gelatin Sheets: Soak the gelatin sheets in cold water for 5-10 minutes until they are soft and pliable.
- Heat Milk Mixture Gently: Heat the milk and pandan mixture gently on the stove until it reaches about 50°C (122°F), then immediately remove from heat to prevent curdling.
- Dissolve Gelatin: Remove the gelatin sheets from the cold water, squeeze out excess liquid, and stir them into the warm milk mixture until fully dissolved.
- Add Coconut Milk and Cream: Stir in the coconut milk and heavy cream gently until the mixture is smooth and fully combined.
- Strain and Chill: Pour the mixture through a fine mesh sieve into a bowl to remove any lumps for an ultra-smooth texture. Then pour the strained mixture into molds and refrigerate for at least 4 hours, or until fully set.
