Ingredients

Scale

Pasta and Vegetables

  • 12 oz dried linguine or spaghetti
  • 1 lb ripe cherry tomatoes, halved
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced

Liquids and Seasonings

  • 4 cups vegetable broth
  • 2 tbsp extra-virgin olive oil
  • 1 tsp sea salt, or to taste
  • ½ tsp freshly ground black pepper
  • ¼ tsp chili flakes (optional)

Finishing Touches

  • 1 large handful fresh basil leaves, torn, plus extra for garnish
  • ½ cup freshly grated Parmesan or vegetarian hard cheese

Instructions

  1. Combine Ingredients: In a large deep skillet or Dutch oven, add the dried pasta, halved cherry tomatoes, thinly sliced onion, minced garlic, olive oil, and vegetable broth, arranging the ingredients evenly.
  2. Season: Sprinkle sea salt, freshly ground black pepper, and optional chili flakes over the mixture to enhance the flavors.
  3. Bring to Boil: Place the skillet over high heat and bring the mixture to a rolling boil, stirring regularly to ensure the pasta does not stick to the bottom of the pan.
  4. Simmer: Reduce the heat to medium and let the pasta simmer uncovered, stirring frequently. Continue cooking until the pasta is al dente and most of the liquid has been absorbed, approximately 10 to 12 minutes.
  5. Finish and Combine: Remove the skillet from heat, stir in the torn fresh basil leaves and half of the grated Parmesan cheese until well combined and creamy.
  6. Adjust and Serve: Taste the pasta and adjust seasoning if needed. Serve hot garnished with extra basil leaves and the remaining Parmesan cheese.

Notes

  • You can substitute vegetable broth with chicken broth if not vegetarian.
  • For a spicier dish, increase the chili flakes or add a dash of red pepper flakes.
  • Use gluten-free pasta to make this recipe gluten-free.
  • Stir regularly while cooking to prevent the pasta from sticking and ensure even cooking.
  • If the pasta absorbs the liquid too quickly and isn’t tender yet, add a splash more broth or water and continue simmering.
