Instructions

  1. Prepare the dough: Beat the softened butter and caster sugar together using an electric whisk for 4 minutes until the mixture is light and fluffy. This step incorporates air into the butter and sugar creating a smooth texture.
  2. Add eggs and vanilla: Beat in the eggs one at a time, ensuring each is fully combined before adding the next. Then add the vanilla extract and mix well to distribute flavor evenly.
  3. Incorporate dry ingredients: Gradually whisk in the cornflour and plain flour until the mixture forms a cohesive dough. Be careful not to overwork the dough to keep the cookies tender.
  4. Roll out and chill: Place the dough between two pieces of baking parchment and roll it out evenly to a thickness of 6mm using a rolling pin. Chill the rolled dough in the refrigerator for 30 minutes to firm up for easier cutting.
  5. Preheat oven: Set the oven temperature to 200°C (180°C for fan ovens) or gas mark 6 to prepare for baking.
