Instructions

  1. Boil the Potatoes: Place the peeled and chunked russet potatoes into a large pot and cover with cold water. Add salt to the water. Bring to a boil and cook the potatoes until they are fork tender, about 15-18 minutes.
  2. Drain and Add Butter and Cream: Drain the cooked potatoes and return them to the pot, allowing steam to escape. Add the butter and heavy cream, then stir roughly to melt the butter completely and begin combining the ingredients.
  3. Add Seasonings and Mash: Add sour cream, kosher salt, black pepper, garlic powder, and Dijon mustard. Using a potato masher, mash the potatoes until your desired smoothness is reached.
  4. Incorporate Cheeses: Stir in 3/4 cup of shredded Gruyere cheese and 3/4 cup of shredded cheddar cheese into the mashed potatoes until well combined.
  5. Top with Remaining Cheese and Melt: Sprinkle the remaining 1/4 cup of each cheese on top of the mashed potatoes. Cover the pot and let it sit on low heat until the cheese melts.
