Ingredients

Scale

Slaw Ingredients

  • ½ white cabbage, finely sliced
  • ½ quantity smoky chilli sauce (refer to the accompanying smoky chilli sauce recipe)
  • ½ lemon, juiced
  • 8 spring onions, trimmed and finely sliced on an angle
  • ½ tsp salt

Instructions

  1. Salt the Cabbage: Place the finely sliced cabbage in a large bowl and toss it with ½ teaspoon of salt. Let it sit for 30 minutes to soften and release excess moisture.
  2. Rinse and Dry: After 30 minutes, rinse the salted cabbage thoroughly under cold running water to remove excess salt. Drain it well and leave it in a colander to dry completely.
  3. Combine Ingredients: Return the dried cabbage to the bowl. Add the smoky chilli sauce and freshly squeezed lemon juice. Toss everything together to coat the cabbage evenly.
  4. Add Spring Onions: Fold in the thinly sliced spring onions, mixing gently to ensure they are well distributed throughout the slaw.
  5. Chill and Serve: The slaw can be served immediately or chilled in the refrigerator for enhanced flavors. It keeps well for up to two days when refrigerated.

Notes

  • The smoky chilli sauce is integral to this recipe; use your favorite or homemade version for the best flavor.
  • If you prefer a milder heat, reduce the amount of chilli sauce added.
  • For extra crunch, you can add grated carrots or chopped fresh herbs such as cilantro.
  • This slaw is a great accompaniment to grilled meats, sandwiches, or as a refreshing side for any meal.
