Slaw Ingredients
- ½ white cabbage, finely sliced
- ½ quantity smoky chilli sauce (refer to the accompanying smoky chilli sauce recipe)
- ½ lemon, juiced
- 8 spring onions, trimmed and finely sliced on an angle
- ½ tsp salt
- Salt the Cabbage: Place the finely sliced cabbage in a large bowl and toss it with ½ teaspoon of salt. Let it sit for 30 minutes to soften and release excess moisture.
- Rinse and Dry: After 30 minutes, rinse the salted cabbage thoroughly under cold running water to remove excess salt. Drain it well and leave it in a colander to dry completely.
- Combine Ingredients: Return the dried cabbage to the bowl. Add the smoky chilli sauce and freshly squeezed lemon juice. Toss everything together to coat the cabbage evenly.
- Add Spring Onions: Fold in the thinly sliced spring onions, mixing gently to ensure they are well distributed throughout the slaw.
- Chill and Serve: The slaw can be served immediately or chilled in the refrigerator for enhanced flavors. It keeps well for up to two days when refrigerated.
